The Elder Scrolls Stewed Apples and Eidar Cheese

Ingredients:
3 tablespoons unsalted butter
4 or 5 large sweet apples, peeled, cored, and diced (I used 5.)
1/4 cup dried currants
1/2 cup packed brown sugar
1 teaspoon Nord Spices
Pinch of salt
Dash of vanilla extract
2 teaspoons cornstarch
1/4 cup cold water
1/4 cup crumbled blue cheese for topping

1. Melt the butter in a large sauté pan or skillet over medium heat. Add the apples and cook, stirring occasionally, for about 6 minutes, or until the apples are somewhat tender. Stir in the currants, brown sugar, Nord spices, salt, and vanilla.
2. In a small bowl, mix together the cornstarch and water, then add to the pan with apples. Cook another minute or so, until the whole mixture has thickened somewhat. Spoon into serving dishes and top with crumbled blue cheese to taste.

Nord Spices:
1 1/2 tablespoons ground cardamom
3/4 teaspoon ground cinnamon
1/4 teaspoon ground mace
1/4 teaspoon ground cloves
1/8 teaspoon ground grains of paradise (PLEASE omit this, I just think it's added to be exotic and I find spending the money on it in this case, wasteful. Just add some pepper if you want the peppery kick added.)

1. Mix together all of the ground ingredients, then store in a small airtight jar.

This was delicious on its own without the blue cheese on top! It is a simple, yummy dessert to end any meal with or if you're just having a sweet craving. :)
