Ingredients:
1 cup (2 sticks) unsalted butter, at room temperature
3/4 cup granulated sugar
1/4 cup brown sugar
1 egg, at room temperature
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 cup white chocolate chips
3/4 cup dried cranberries (optional)

1. In a large bowl, cream the butter, granulated sugar, and brown sugar together. Add the egg and both the vanilla and almond extracts. Scrape the sides and bottom of the bowl as needed to fully incorporate the wet ingredients.
2. In a small bowl, combine the flour, cocoa powder, baking soda, and salt. Slowly add the flour mixture to the wet ingredients until well combined. Fold in the white chocolate chips and dried cranberries, if using. Cover the bowl with plastic wrap and refrigerate overnight, or up to 2 days (I shall be honest, this went straight in the oven).
3. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper. Drop the dough onto the cookie sheet in heaping tablespoons, roughly 2 inches apart. Bake for 10 to 15 minutes, until the edges crisp up, rotating the pan once during baking. Allow to cool completely on a rack.
All in all, these were good chocolate cookies. I have had better, however, these were still tasty. The almond overpowers in my opinion and I think it would taste better omitting the cranberries (just in this particular case. Usually, I love fruit and chocolate combinations).
