While Kerbals don't seem to mind being spam in a can for years on end, if human beings go to the planets they are going to need some leg room. An interplanetary manned spacecraft would really be more like a flying space station, it's going to need lots of supplies, serious power generation, it is probably going to need greenhouses so the inhabitants can grow food (and recycle carbon dioxide and produce oxygen,) and they are going to want excursion vehicles for when they get where they are going.

Normally such a huge vehicle would be assembled piecemeal on orbit, but since these are Kerbals, we are going to launch the whole thing in one go. :)
