2I met Top Chef winner Chef Hosea at the wedding of Katie Lasalle and Lon Symensma and he invited me to check out his restaurant, market and butcher shop Blackbelly in Boulder for breakfast burritos and donuts. (Donuts are only on Fridays)
This operation is incredible. It's a market, butcher shop, sandwich shop and they make charcuterie on premise on one side and a full service restaurant on the other side.
They are the premier butcher shop and market in Boulder, Colorado, dedicated to providing ethically-sourced, high quality products, while cultivating relationships with local ranches, farms, and our community.
I'm going back next week for dinner on the other side of the building.
