Well it's touhou so this fight was inevitable.

Difficulty: 8/10

Yukari isn't easy by any means. She's the penultimate boss after all and she can open rifts right beneath you but by this point there's very little she can throw at you that you haven't faced already aside from her bomb where she sends multiple waves of trains at you. But as long as you keep your cool it's one of the easiest bombs to dodge in the game, though if you get hit say goodbye to half your health.

The game makes mention of how Yukari isn't as strong as Yorihime and the game affirms that because outside of the bomb she's weaker in basically every way. I get that they didn't want to make the last level too brutal since there's 3 minibosses and 3-4 major bosses in this one level but... there's checkpoints so I don't see the issue.
