The only real hidden character in the arcade version (Geese is hidden, though you simply have to move the cursor to the right of Billy to select him), Li Xiangfei offers a very different style to the other characters. The developers at SNK must think highly of her, considering she's a hidden character in this game, and was also added later to the KOF series. Poor Rick Strowd, he just couldn't catch a break.
Xiangfei's style is rather unique, with a few counter moves and a few strike moves. She's a good addition to an otherwise quite generic Fatal Fury game (being yet another reboot of the series), and was probably the only feasible hidden character.
To unlock Li Xiangfei:
1) Complete the game with all 11 default characters, including Geese, who is selectable by moving right from Billy Kane's Icon. Then, at the title screen, hold A + B + D and press start. Li Xiangfei will now be selectable, and Geese's icon will appear on the character select screen too.

Extract the files, add the folders with the NVRAM files to your own NVRAM folder and allow them to overwrite your own NVRAM. Start up the game on MAME, and you'll be able to play as Li Xiangfei, and Geese in his suit costume.
The lack of footage of Xiangfei in the arcade version of this game prompted me to do this video, as well as the annoyance that no one seemed to have an nvram with her unlocked. Playing through as every character in this, quite frankly, mediocre game was quite a chore, but now luckily no one else will have to go through that, so save yourself the time, download my nvram, and enjoy the few secrets there are in this game. This game isn't really that good. It's like Fatal Fury mixed with Virtua Fighter, with attacks coming out in a more slow, realistic manner. This doesn't work too well, however, as your attacks have a tendency to get countered by the opponent throwing you, and like Virtua Fighter both character have a tendency to hit each other at the same time. It's quite awkward, and it didn't suit a fluid 2D series like Fatal Fury.
