The Unicorn is hard to find, but In this video I'll show you, that it's not impossible to find a Unicorn. Once the Unicorn is found, it's an easy tame.

I spend a lot of time trying to find the unicorn and I had no luck. After much testing I figured out I had to kill my already tamed Unicorn. Once the tamed Unicorns was killed, I found one "pretty" fast using a helper tool that's named "Ark Tools".

I used the command promt - write "CMD" in run or when you pushed windows key. After that write something like this, if this is your base where you put your Ark Tools program.
ark-tools.exe wild c:\at\theisland.ark c:\at\output\

So from my testing, the Unicorn will only spawn when there is none tamed on the map. I read that people on some servers was able to tame multiple, but I wasn't that lucky.. Maybe there's a bug or something, because Jen the ARK employee wrote in a message somewhere, that only one Unicorn could be on a map at a time.
