I had a little left over Birria the other day and decided to give this a shot!! It was incredible, and I preferred them to the taco’s honestly!

Ingredients:

• 1.5 cups of Shredded Birria Meat
• 1/2 cup Diced White Onion
• 1/4 cup Chopped Cilantro
• 1.5 cups of Chihuahua cheese
• 2 tbsp Birria seasoning (optional)
• Egg Roll Wrappers
• cooking spray
• Consome for dipping

Instructions:

1. Start by combining the meat, onion, cilantro, and cheese in a large mixing bowl. If you can, also add some of the Birria seasoning I show how to make in a previous video!

2. Place down an egg roll wrapper as shown in the video, it should resemble a diamond. Then place about 1/3 cup of the filling on the egg roll near the bottom third.

3. Now we need to roll the egg roll, start by carefully bringing the point closest to you up and over the filling. Make sure you press the filling in to keep it in place. Then we need to fold the left and right corners in, this will create out seal on the ends. At this point it should resemble an envelope. Then use a pastry brush to wet the top corner edges with water and roll tight to seal.

4. Preheat the air fryer to 360F. Then we can oil up the basket, place the egg rolls in but make sure not to crowd them, and spray the tops. Cook for 7-8 mins.

5. Flip, cook for 2-3 more mins as needed.

6. Pull them out, let them cook slightly and serve up with a warm bowl of Consome!
