You need these Mashed Potatoes for Christmas this year! | Garlic and Shallot Mashed Potatoes #shorts
For day 2 of my 12 Days of Christmas Dishes… we’re making Fried Garlic and Shallot Mashed Potatoes!
You get to kill 2 birds with 1 stone here by making crispy garlic and shallots for an amazing garnish, while also infusing the browned butter with a ton of flavor!
Ingredients:
• 2.5-3 lbs Yukon gold potatoes
• kosher salt
• 1 shallot, thinly sliced
• 4 cloves of garlic, thinly sliced
• 2 sticks of unsalted butter
• 3/4 cup of heavy cream or whole milk, warmed
• parsley
Instructions:
1. Start by peeling and dicing the potatoes into equal size cubes and soaking in cold water for 10 minutes.
2. In the meantime, fill a pot with cool water and thinly slice the shallots and garlic and set both aside.
3. Drain and transfer the potatoes to the large pot with water and place on the stove. Bring to a boil and cook for 10 minutes or so, or until fork tender. Make sure they start in cool water to ensure even cooking throughout!
4. While the potatoes cook, you can melt the butter in a skillet over medium heat. Once the butter is melted, toss in the shallots and garlic and stir until they start to get golden brown like you see in the video! Be carelful to not burn these, they go from light brown to burnt fast! Remove the shallots and garlic and let them drain, and set the butter aside to cook
5. When the potatoes are done, drain them and return to the pot they were cooked in and cover to let steam for 10 minutes.
6. Run the potatoes through a ricer to get the best consistency and then we can add the warmed butter and the warmed cream or milk and stir in to combine. Once the butter and milk/ cream in incorporated, stir quickly with a whipping motion to incorporate air and get an even fluffier mash!
7. Garnish with the crispy aromatics and parsley and enjoy!
