Clearly this is the type of game where multiple playstyles and synergies that can certainly work out for you. If you want a layman approach without thinking too hard about how to win, especially on later difficulties, I've found that combining good defense (primarily armor and HP regen) and movement speed to help kite enemies is a surefire way to win via surviving. There is no requirement for killing mini-bosses/bosses, surviving works all the same. Defense and mobility will be your best friend in this game in the long run.
As a side note, surprisingly, having lowered luck stats really doesn't matter much since I still got good things to level up and buy post-waves so don't fret on that category. Harvesting helps too but considering how many enemies the game throws at you, you'll still earn a lot of coins and levels regardless.
