Dr. Niki Davis is a “rocket scientist” turned board certified family medicine physician. She obtained bachelor and master degrees in mechanical engineering and worked on the space shuttle program for several years. She had always been interested in health and nutrition and eventually found her way back to her passion. She graduated from the University of Utah School of Medicine and completed her family medicine residency in Montana. She has had great success helping patients prevent and reverse chronic disease through lifestyle change. She has been lucky enough to work with phenomenal mentors such as Dr. John McDougall, Dr. Michael Klaper, Dr. Anthony Lim, and Dr. Alan Goldhamer, among others. Currently, she can be found speaking at plant based events around the country, running wellness retreats around the world, and spending time with her husband and son in Salt Lake City.
Spiralized Hash Browns
Serves 2
Equipment needed: spiralizer, non-stick panini press/griddler
Ingredients:
2-3 Yukon gold potatoes, peeled
Optional:
½ avocado, sliced
½ tomato, diced
¼ red onion, chopped
Ground sumac berries to taste
Preheat panini press (medium heat).
Spiralize each potato and pat dry between two paper towels.
Place potatoes on panini press evenly and close. Cook until browned.
Add toppings such as avocado, tomato, red onion, and ground sumac berries to taste.

Augie’s Berry Smoothie
Serves 4
Equipment needed: blender
Ingredients:
Handful fresh greens such as kale or spinach
Fresh fruit such as peaches, cherries
1-1.5 frozen bananas
½ - ¾ cup frozen berries
1-2 cups oat milk
Add all ingredients to blender in order with fresh ingredients on bottom and frozen ingredients on top.
Add oat milk until just covering fruit.
Blend.
