Using checkpoint retry to glitch things up and escape the fight early.

Good news is that the trick doesn't require a jump of any sort, making it New Game-viable. Bad news is that you have to open up Start-menu after the vortex cutscene at a very precise moment before a new checkpoint kicks in... it's pretty much frame precise, making a hypothetical speedrunner tear out his hair while attempting to do it.

Also, you must've not completed the early level normally for this to work. Otherwise there'll be an invisible wall preventing you from reaching Kat. I think even in New Game you can do a high jump using the enemies to reach the Blue Rose early, so it shouldn't be an issue.

This trick could be performed faster than here, I'm pretty sure. During the loading time after having performed the glitch, Dante is falling into nothingness... although I don't know why the game throws you into a game over-screen afterwards, I could've fallen faster down by using Helmbreaker, saving some seconds in the process. I also didn't choose to continue as quickly as could've been possible.

I'm not 100% sure yet about the workings of the in-game clock in this game, but it looks like game doesn't count loading times against you, making this trick pretty time-efficient in a run.

(Not on the vid: on yet another attempt I chose to quit to main menu after having done the glitch. I didn't notice any strange side-effects afterwards when I tried to replay the same level again.)
