If you want to play with Centered Viewmodel, these are the commands I used:
bind (any key) "hands_fovscale 0.8; hands_offsetx 0.1; hands_offsety 0.128; hands_offsetz -0.03"

This will bind the Center Viewmodels to a key.

If you wish to turn off Center Viewmodel set all commands to 0 or bind to another key as such:
bind (any key) "hands_fovscale 0; hands_offsetx 0; hands_offsety 0; hands_offsetz 0"
