Your first priority in this fight is to keep Rinoa alive. She has Regen magic that you can draw and then cast on her, which will help. If you want to risk it, you can mug Megalixirs from her. Your best bet is to cast Curaga on her, try to steal them, and then cast another Curaga immediately after. Other than that you should never attack her. If her HP hits 0 it's game over.

As for Adel, she isn't really that dangerous. Her Energy Bomber is pretty strong, but you can easily heal whoever gets hit with it. She uses Meteor often, but it's pretty weak. If you can configure your Junctions so that your characters absorb earth magic, you can use her Quake spell to your advantage. Her last attack is an Ultima spell, which is pretty powerful, but she doesn't use it often. You can steal a Samantha Soul from her. It's best to stick to physical attacks, but if you prefer magic be sure to use spells that will only hit Adel.
