This is not really a typical dungeon run.

In FFXIV, up to level 20, if you are playing a healer class, you can usually get into a dungeon instance instantly. If you are playing DPS, you're likely waiting more than 30 minutes. This is not really a design defect as you'll see in a bit.

After the first boss, the Tank disappears. So we wait around to see if anyone joins. Nope. So we continue past up to the second boss without a Tank. So the two DPS decide to leave at that point... but then suddenly another tank and another DPS join and I'm like ... it would be incredably rude to just drop them.

So for the last 10 minutes of the dungeon I continue on with a completely different party.

Up to this point in playing FFXIV:ARR, I have not had a Tank character disconnect or exit.

So what you'll notice is that it is possible (at least at this dungeon) to continue without a Tank character. The way the game AI works however is that aggro/hate/Enmity (FFXIV) in a dungeon will target either the first character that attacks OR the closest character, and usually as a group. What you don't really see here is that casting magic (heal on the party member being attacked) also attracts Enmity without a tank to draw it away. Also the way combat was redesigned, is somewhere between boring "press x to win" and Action where you have to get out of the way of some attacks. However most non-skill attacks are unavoidable by movement, and at best if you're an archer you can keep moving to make the AI keep trying to get closer before using it's skills.

In other MMO games I've played (which were more action than this) don't cap levels, so you can effectively rush a dungeon. You can't rush a FFXIV dungeon. FFXIV also lacks the exploring aspect of a dungeon (version 1) in favor of a instanced based dungeon run (version 2) and while I do think this is fun this way (and harvesting bots can't get in them, or other players camping monsters) it does lack an exploring element.

As for rare gear, there's two kinds. You get either the Unique (Green, bind on equip, tradeable, can only have one), or Untradeble (Pink, not tradeable, can only have one.) If you already have one, you can't click need or greed, only skip. If you are currently playing the class needed to equip it, you can roll need. Otherwise you can roll greed. Also, you can not trade items during a dungeon instance. So if you roll greed and someone later decides they want it, too bad.

Dungeon instances are system-wide. So you're matched with people from other servers (I assume only on NA or JP.) So yes if you want to avoid 30+ minute waits for the dungeons , you may want to do the storyline on a Tank or Healer.
