Previously I forgot to try turning on Unlimited Fuel and remove the blacking out effect. I got curious of what I could achieve in that case, and here it is.
Fuel fixed at 1% (161 lbs), no pylons, full flaps, near sea level.
Most importantly, STANDARD DCS weather. The result, as you can see:
- over 30° per second infinitely sustained (didn't feel like flying in circles for hours there);
- ~ 940 feet turn radius;
- over 8 Gs;
- it was a terrifying experience :)

Realistic? If you say so...
