Grandma's Cookbook - Chocolate Fudge
Recipe as written:
2 sq. unsweet. chocolate
3/4 c. milk
2 c. gran. sugar
1 T. corn syrup
2 T. butter
1 t. vanilla
Add chocolate to milk and place over low heat. Cook until mixture is smooth and blended, stirring constantly. Add sugar, corn syrup and salt, and stir until sugar is dissolved and mixture boils. Continue boiling, without stirring, until a small amount of mixture forms a soft ball in cold water (234). The ball will flatten when removed from water. Remove from heat. Add butter and vanilla. Cool to lukewarm (110) then beat until mixture begins to thicken and loses it gloss. Turn at once into greased pan, 8x4 in. When cold, cut in squares. Makes 18 large pieces. You can vary this fudge by adding during beating process 1 c. chopped nut meats, or seedless raisins: 1 c. shredded coconut: i 1c. chopped date 1 c. chopped candied or dried fruits or 16 halved marshmallows.
