Hamburger Platter

½ tsp. Salt
¼ tsp. Pepper
½ tsp. Onion Powder
¾ tsp. Paprika
½ tsp. Garlic Powder
½ tsp. Cajun Seasoning
¼ tsp. Chili powder
2 large Potatoes
1½ Tbsp Cooking oil
1 lb Ground beef
3 Sesame Hamburger buns, toasted
6 slices American or Cheddar cheese
1 large Tomato, sliced
1 small Onion, thinly sliced
Lettuce
Dill pickles
Ketchup
Homemade mustard
Mayo (optional)

Mix the salt, pepper, and spices together. Slice the potatoes into french fry lengths. If you have time, soak them in cold water for 30 minutes and then drain. If not, or after they have been drained, put the potatoes in a baking pan. Drizzle with the oil and toss with 1¼ tsp of the spice blend. Spread out evenly and bake at 425° for 20-25 minutes, or until the fries are golden brown.
Put the remaining 2 tsp of the spice mixture in a bowl with the ground beef and mix well. Shape into 3 hamburger patties. Cook the patties in a skillet over medium-high heat with a small drizzle of oil until done. If you prefer your onions cooked rather than raw, you can add your onion slices to the skillet at this point.
Once done, add your cheese slices and assemble the burgers including the tomatoes, onion, lettuce, ketchup, pickles, and homemade mustard. Serve with the french fries with plenty of ketchup, a simple side salad, and a nice glass of milk.

Homemade Mustard Sauce

½ cup water
1/3 cup ground Yellow Mustard
¼ tsp. Salt
1/8 tsp. Turmeric
Dash of Paprika
¼ tsp. Garlic powder
2 Tbsp White or Cider vinegar

Combine all ingredients in a small saucepan and stir until smooth. Bring to a simmer over low to medium-low heat and cook, stirring frequently, until thickened to your desired consistency. Remove from heat and cool. Ideally make this mustard the day before using to allow the flavors to fully balance.
