Our family has a mild obsession with tea parties, and these sandwiches are 100% without a doubt going to start featuring heavily on those occasions. They are so good! We're pretty sure Bess would also adore them.

Cucumber Sandwiches

1 English Cucumber
8 Slices White bread
4 oz Cream Cheese, softened
2 Tbsp Mayo
1 Tbsp fresh Dill or 1 tsp dried Dill or Dill Seeds
Salt & freshly ground Pepper
1 Tbsp Capers, minced, & 1 tsp of their juice
2 Tbsp Red Onion, minced

In a bowl, mix together the cream cheese, mayo, dill, salt, pepper, capers and caper juice, and onion. Spread onto each slice of bread, then thinly slice the cucumber and layer over half of the bread. Top with the remaining slices of bread and cut off the crusts before cutting into mini sandwiches.
