Scotch Pie Recipe from Nancy Drew: The Silent Spy
While this recipe may be the one we are most divided on so far, we know one thing: Nancy would eat at least 6 of these in between sleuthing. And she'd still have room for a snack afterwards.
Scotch Pie Pastry
2 cups Flour
½ cup Lard or Shortening
½ cup Water
½ tsp. Salt
Stir the salt and flour together. Combine the lard and water in a pot until the mixture is simmering and the lard is fully melted. Make a well in the middle of the flour and stir in the hot water mixture. Stir until a dough forms and continue to knead for about a minute until smooth. Roll out the dough onto a floured surface until fairly thin. Oil or grease some round baking dishes or another oven safe container and cover the bottom with parchment paper. Line the dishes with pastry and cut away any excess at the top, then cut pieces of pastry just slightly smaller than the top of your dishes. Stack the top pieces of pastry between parchment paper to prevent sticking and chill the dishes and the top sheets in the fridge for at least 1 hour, preferably for 24 hours.
*If you are using glass baking dishes, let them sit at room temperature when preparing the filling to prevent drastic temperature changes and risking them breaking by putting them straight in the oven.
Scotch Pie
1 lb ground or minced Lamb &/or Beef
1 med/lg Onion, minced
1½ tsp. Marjoram, or mixed Herbs such as Marjoram, Basil, Oregano, &/or Rosemary
¾ tsp. ground Mace (or Nutmeg if unavailable)
1/3 cup+ Beef or Lamb Broth or Gravy
½ tsp. each Salt & Pepper
1 batch prepared Scotch Pie Pastry
Milk
Saute the onion in a pan until tender, then add the herbs, mace, and salt and pepper. Cook for another minute or two, then remove from the heat and mix in the broth or gravy. Let cool a little and then combine the onion mixture with the meat and fill the pies to about ½-¾” from the top of the shell. Lay the top pastry piece over the filling and brush the top with milk. Bake at 350° for 35-40 minutes. Remove from the baking dishes carefully before serving, and enjoy them as is or topped with baked beans or your favorite steak sauce or other sauce.
Brown Sauce Substitute
1 part A1 Steak Sauce
1 part Worcestershire Sauce
1 part Ketchup
Mix all together and let sit for a few minutes before serving so the flavors can meld.
