Pasta & Veggie Platter from Nancy Drew: The Haunted Carousel
It turns out that there are even more good reasons to not burn down the hotel in The Haunted Carousel other than accidental arson, and this delicious meal from the hotel menu is one of them! Nancy is just like us, she makes sure to center her trips around lots of delicious meals.
Pasta & Veggie Platter
1 lb Penne Pasta
1 Tbsp Olive Oil
½ Onion, chopped
4 cloves Garlic, minced
8 oz sliced Mushrooms
½ cup Sundried Tomatoes, chopped
½ cup White Wine
½ cup Pasta Water or Chicken broth
1 tsp. Red Pepper Flakes
1 cup Heavy Cream
1-2 cans Artichoke Hearts, drained and chopped
½ cup fresh Basil, chopped
½ cup Asiago cheese, shredded
Cook your pasta until almost al dente. In the meantime, heat the oil over medium and saute the onion until tender. Add the garlic, mushrooms, tomatoes, and artichokes and cook for several more minutes, until the garlic is starting to turn golden but do not overcook the mushrooms. Set aside the veggies and add the wine, water or broth, cream, and pepper flakes to the pan. Bring to a simmer and cook for a few minutes, then add the pasta and cook for 4 or 5 minutes more to allow it to soak up the sauce. Add the veggies back to the pan and stir well to combine, then stir in the basil. Sprinkle with Asiago and serve with a simple side salad, a roll, and a soda. (Make that an orange soda for Nancy!)
