The legendary Sponge is not so legendary as he is in this game. While he does bring a decent stat pool in terms of raw speed, his extremely numb handling is what kills him, making it very difficult to win on technical tracks. He is also a top heavy car and can tumble around if not handled properly. Hitting ramps seems to raise the front of him a little bit, which is a blessing for entering loops immediately afterwards. He's also EXTREMELY heavy, likely one of the heaviest cars in the game. Just too unviable for the harder and maybe even some of the less complex aerial shortcuts.
SpongeBob SquarePants is very underwhelming. He may be fast, but doesn't really live up to his reputation. With his numb handling and extremely heavy weight, he's not the greatest driver in the world. No wonder why he constantly fails the boating school exam... Better stick to the track and easy shortcuts with him.
