To change your PlayStation 5 online status and appear offline using the PlayStation App on your phone, follow these steps:

Open the PlayStation App: Ensure the app is installed (iOS 14.0+ or Android 8.0+) and sign in with your PlayStation Network (PSN) account linked to your PS5.
Access Your Profile:
On the app’s home screen, tap the Play tab (controller icon) at the bottom left.
Tap the Gear icon in the top-right corner to open Settings.
Change Online Status:
Scroll to the Console Management section and select Online Status.
Choose Appear Offline from the options (Online, Busy, or Appear Offline). Tap Done to save.
