Cards in the Extra Deck can be used at anytime during your mainphases, as long as you meet the conditions for those cards listed in their text.

The easiest to learn is the Link monsters.

If you take Phoenix (Knightmare Phoenix) as an example, if you have simply any 2 monsters in the game with 2 different names (Sheep Token, Amazoness Baby Tiger), you can send them both to the GY to then bring out Phoenix to the extra monster zone, or to a zone that a link monster points to directly. The other extra deck monster types can be summoned to any zone however.

For XYZ monsters (Gem-Knight Pearl), they work with levels. To bring out a rank 4 like Pearl for example, you’d need any 2 level 4 monsters on the field (Tearlaments Reinoheart, Tearlaments Scheiren).

For Synchros (Gaia Knight, the Force of Earth), they also work with levels, but they require some math and very specific monsters called β€œtuners” (Noh-P.U.N.K. Ze Amin). The level of the tuner, and the non-tuners (Jerry Beans Man) must add up to equal EXACTLY the level of the Synchro monster you wish to bring out. (Noh-P.U.N.K. Ze Amin + Jerry Beans Man = Gaia Knight, the Force of Earth)

And for fusions (Red-Eyes Dark Dragoon), they work like a cooking recipe. You need the exact cards in its text (Dark Magician, Red-Eyes Black Dragon), and exactly a fusion spell card (Red-Eyes Fusion) in order to bake the recipe that lets you bring it out. Unless it has an alternative summoning condition (Thunder Dragon Colossus, ABC-Dragon Buster, Trishula, the Dragon of Icy Imprisonment)
