Do you like Mushrooms? It feels like they are one of the most polarizing vegetables. Today’s recipe is Mushroom Balls with Tomato Sauce inspired by the beautiful indie game Lost Ember by German developer Mooneye Studios. Even if you normally don’t like this controversial ingredient, this easy dish might make you change your mind. And if you want to, you could even turn the recipe vegan pretty easily.

400g Chopped, Canned Tomatoes
4 Garlic Cloves
10g Fresh Basil
1 Egg
250g Mushrooms
Small Onion
10g Fresh Parsley
25g Oats
40g Grated Parmesan
Salt
Black Pepper
Chili Flakes

-Preheat your oven to 200C top/bottom heat
-Line a baking sheet with baking paper
-cut the mushrooms into chunks
-peel and chop the onion and garlic
-chop the parsley and onion
-Heat a large skillet over medium heat
-melt the butter in the pan
-add onion and mushroom and stir
-spice with salt, pepper and chili flakes
-cook, stirring occasionally, until tender and the moisture is gone (~7-8 min)
-add ¾ of the garlic and sauté until the mushrooms have browned (~4-5 min)
-transfer the mushroom mix to a bowl
-add water into the pan you put back onto the heat to deglaze it
-pour in the canned, chopped tomatoes
-add the rest of the garlic and stir
-spice with salt, pepper and chilli flakes
-chop the basil and add it to the sauce
-let everything simmer while you prepare the balls
-Add parsley, oats, parmesan, salt, pepper, chili flakes and an egg to the mushroom mix
-shape 10 balls roughly the size of a golf ball
-place the balls on the prepared baking sheet
-bake for ~20-25 min until browned and firm
-check if the sauce needs some more spicing
-transfer the tomato dip to a bowl
-Guten Hunger!
