How to make Stuffed Swedish Meatballs inspired by Lost in Random (Recipe+Review)
Ever went to a certain Swedish furniture giant and thought: “I want Stuffed Swedish Meatballs inspired by Lost in Random.” No? Well, let’s change that! This unique indie gem by Zoink! Games feels like they threw a board game, Tim Burton and Alice in Wonderland into a big pot and out came this. It deserves not one, not two, but three different types of meatballs … which all look the same, so you’ll never know what you’ll get, because: Random Rules!
RECIPE:
25g Breadcrumbs
250g Ground Pork
250g Ground Beef
1 Onion 90g
1 Egg
8g Salt
4g Ground Black Pepper
4g Ground Nutmeg
50g Mild Cheese (e.g. Gouda)
30g Red Currants
60g Butter
30g Flour
400ml Broth
100ml Heavy Cream
600g Potatoes
Oil
- mix the nutmeg, the salt and the pepper
- grate the onion
- crack an egg into the union mush
- add a third of the spice mix
- add the breadcrumbs to the bowl and combine everything
- set aside to soak
- cut the cheese into cubes
- take the currants of their twigs
- get three small bowls ready
- put 150g of each meat into two separate bowls and mix the rest in the third bowl
- add a third of the egg-onion-spice-breadcrumb mix into each bow and mix
- divide the contents of each bowl by six
- shape the mixed meat into cubes
- cover the cheese cubes in beef/pork
- roll the beef/pork into rough balls and flatten them
- add 3 berries into the centre, close the “package and form cubes
- heat a splash of oil in a pan over medium high heat
- add half the meat cubes and roast them from all sides
- remove them onto a plate and repeat with the rest
- lower the heat to medium
- add half the butter into the skillet and let it melt
- whisk in the flour and cook it for a minute
- add the broth slowly without stopping the whisking
- pour in the cream and turn the heat up a bit
- a dd the meat cubes and their juices
- let it simmer while you prepare the mashed potatoes
- peel the potatoes and dice them
- add them to a medium pot filled with water
- add salt and bring to a boil
- cover with a lid and reduce the temperature slightly
- cook around 10min till tender
- add the leftover spice mix and butter to the still hot potatoes
- mash everything together with a fork or a potato masher
- serve the cubes, the gravy and the mash while everything is still hot
