What You'll Need

Ingredients
* 3
eggs* 1/8 cup heavy cream
* Salt and pepper to taste
* 1/2 tbsp
butter* 1 tbsp
chives, chopped* 2 tbsp smoked
salmon, chopped
Equipment
* Medium bowl
* Medium skillet
* Burner
* Spatula
* Plate

Instructions

1. Whisk together eggs and heavy cream in bowl. Add salt if desired (the salmon will already make it salty) and black pepper.2. Melt butter in skillet on medium heat.3. Add a half a tablespoon of chives to egg mixture.4. Drip small amount of egg mixture in skillet to test heat of skillet; if it sizzles, heat is high enough. Add rest of mixture to skillet. Use spatula to pull mixture away from sides occasionally, allowing uncooked parts of mixture to touch bottom of skillet. Work your way around the skillet with the spatula.5. While mixture is still partially wet, mix in smoked salmon. Continue cooking until eggs are fully solidified.6. Transfer eggs to plate and sprinkle with remaining chives.

Tips

* Substitute milk or water for the heavy cream for a healthier dish.
* Spoon this dish onto toast with avocado for an easy, open-faced sandwich.
