You can quickly set a "Save As" keyboard shortcut in OS X by using the Keyboard Shortcuts feature in System Preferences. This video will demonstrate how to set this up in just a few seconds using the familiar Command+Shift+S keystroke to 'Save As...',

This works in all modern versions of OS X, including El Capitan, yosemite, Mavericks, but is demonstrated here in OS X Yosemite.
