To disable automatic video clip uploads on your Xbox Series X, follow these steps:

Press the Xbox button on your controller to open the guide.
Scroll right to the “Capture & Share” section.
Select “Capture Settings”.

In the “Automatically upload” dropdown, choose “Don’t Upload”.
