■Ingredients (4 servings)
・600g chicken thighs [for deep-frying]
・4 soft-boiled eggs
・5 slices of ginger (thinly sliced)
・A little salt and pepper
・1 tablespoon salad oil
☆Seasonings
・4 tablespoons sake
・4 tablespoons soy sauce
・4 tablespoons sugar
・400cc water
■Procedure
(1) Heat salad oil in a frying pan over medium heat and place the chicken skin-side down. Sprinkle with salt and pepper and cook until the skin is golden brown.
(2) Wipe off excess fat and turn the chicken over. ☆ Add ginger and heat over medium heat. Once boiling, cover with a lid and simmer over low heat for 20 minutes.
(3) Turn off the heat, add soft-boiled eggs and let cool. (Turn the soft-boiled eggs upside down halfway through cooking to ensure the flavor is evenly distributed throughout.
When reheating, it is recommended to remove the soft-boiled eggs before heating.
If desired, add shredded green onions to finish.)
