Making Delicious, Homemade Spinach Dip in the Mountains

Making a tasty homemade spinach dip while camping in the mountains? You bet! Why settle for canned salsa or store-bought dips when you can easily make your own by the camp fire? In this video, I show you how to make a creamy, delicious, homemade spinach dip while camping in the mountains or while you're at home. It's easy to make and only takes about 20 minutes. You'll love it!

Here is the recipe I use in this video:

HOMEMADE SPINACH DIP

1 tablespoon butter or margarine
1/4 cup finely chopped yellow onion (I recommend using only a yellow onion and not white or red)
1 clove garlic, minced (I use pre-minced garlic that comes in a glass jar. 1 teaspoon of bottled garlic equals 1 clove of fresh minced garlic)
1 8-ounce package of cream cheese, cut up into chunks (fat-free cream cheese can be used but I think it ruins the flavor)
1/4 cup of milk
1 10-ounce package of frozen chopped spinach that's been thawed and well-drained
1/4 teaspoon finely shredded lemon peel (I use the dried lemon peel that comes in a small glass bottle and is found in the spice aisle at the supermarket)
1 tablespoon lemon juice
2 teaspoons of Worcestershire sauce
Several drops of bottled hot pepper sauce (optional ingredient, but I use it)
1/4 cup finely chopped red sweet pepper OR 4 slices of crispy, cooked, crumbled bacon (I prefer the red sweet pepper instead of the bacon)
1 to 2 tablespoons of milk

1) In a medium saucepan, melt the butter or margarine over medium heat. Add in the onion and garlic. Cook them until the onion is tender. Stir occasionally while cooking them. Add the cream cheese and the 1/4 cup of milk. Cook and stir until smooth.

2) Stir in the spinach, lemon peel, lemon juice, Worcestershire sauce, and, if desired, the hot pepper sauce. Heat through. Stir in the 1/4 cup finely chopped red sweet pepper (or the bacon if you decided to use that) and 1 to 2 tablespoons of milk to reach your desired dipping consistency. Let dip heat through for a minute or two. Transfer it to a serving bowl and enjoy!
