A playthrough of the Mortal Kombat Deadly Alliance Arcade Ladder with Scorpion on Max Difficulty.

Beating the AI on Max difficulty is not too difficult provided you learn its patterns.
Sidestepping is the key, however unlike with Sub-Zero, Scorpion's spear has a much larger recovery time and as such is not as effective as his freeze. Therefore you are better off sticking to a combo or a juggle since the AI will probably block like 95% of the spears you throw at it.
Generally, the best two approaches from my point of view towards the AI are the following:
Either use plenty of juggles and special attacks. After all, the AI keeps spamming combos, specials and style branches, so why shouldn't you?

A very basic juggle with Scorpion is Up + Circle (x3). This will take away 11% of the AI's health if it doesn't block. You can usually spam this and then sidestep. However, keep in mind that Scorpion's juggle has a pretty low range and angle so you have to be pretty close to the opponent to execute it and even then you might get hit a few times, so calculate wisely. Once the opponent has 5-10% health remaining just spam Backflip Kick until your opponent is down.
In my video, this approach seemed to work best with Shang Tsung and Nitara since it was an unconventional style and also both of them can steal your health at close ranges.

Second Approach:
Just use Scorpion's Sword and execute the following combo:
Circle, Square, Square, X, X, Circle, Circle.
This will juggle the AI and takes around 25% of the enemy's health.
Let the enemy come close to you, block their attack or combo and then attack with the above.Certain characters will fall very easily to this strategy.

As for Moloch, execute Circle, Square, Square, X, and then sidestep.
Eventually you will get into the rhythm and might even get a flawless on Moloch like I did.
