Update: I got flight simulator running a lot better in VR. Turning off the motion tracking smoothing features in the Steam VR game specific settings helped and turning down most graphics settings in game to low was a required sacrifice I had to accept. It still looks good enough in VR on low but the smoother framerate means I don't feel sick after just a few minutes! The game defaulted to medium settings in VR so I thought that would be fine (it defaulted to high in non-VR mode and that was okay) but even medium was too demanding for VR.
