Theresa “Sam” Houghton’s journey to improve her health turned into a passion for sharing actionable, life-changing information. In 2009, she went plant-based; in 2014, she became a health coach. All the while, she was writing content to pay the bills.
But Sam has been crafting stories and writing informative reports since she was a kid. Her love of exploring interesting topics—and helping people learn to make better, healthier food and lifestyle choices—inspired her to merge health coaching with content creation.
Thus, The Modern Health Nerd was born. As a combination content marketing business and media company, The Modern Health Nerd helps plant-based, better-for-you and functional brands understand their customers, save time on marketing and create engaging content that drives sales.
Sam is a graduate of both the Bauman College Nutrition Consultant program and holds a Certificate in Plant-Based Nutrition from the T. Colin Campbell Center for Nutrition Studies. She uses this expertise to bring a unique perspective to content marketing and spends one evening per week sharing tips and answering questions about plant-based diets in the Whole Food Plant Based Club on Clubhouse.
Her writing appears regularly on NutritionStudies.org and the Upside by VitaCost and has been featured on Green Queen Media. She has been a guest on the Vegan Stories Podcast, Vegan Visibility, the ProteinX Virtual Coffee series, and Let’s Eat with Mark Samuel. She is also the host of The Modern Health Nerd Podcast, a podcast dedicated to bringing together movers, shakers and innovators from across the food and health spectrum for fascinating conversations that examine what individuals and companies are doing to transform what we eat and how we live.
When she’s not writing or cooking, Sam likes to read and study the Bible, cook tasty plant-based food, hang out at farmers markets and knit crazy socks. Makes 20 bites
Peanut blossoms are a Christmas classic, but they're not exactly a nutritious snack! These plant-based bites are perfect when you want that traditional cookie taste without added oil or sugar, plus they’re packed with healthy fats, fiber and antioxidants.
Ingredients
1 cup rolled oats
½ cup dry-roasted peanuts
1 cup medjool dates, pitted
⅓ cup natural unsalted creamy peanut butter (Try one made with Valencia peanuts if you can find it!)
1/4 teaspoon pure vanilla extract
2 tablespoons raw cocoa powder (can substitute regular or Dutch processed)
Instructions
Place the oats and nuts in a high-speed food processor, and process until chunky and well-combined.
Add the dates, peanut butter and vanilla. Process until a sticky "dough" forms. (Add more dates or peanut butter if it's stubborn about sticking together.)
Form into balls, and roll in cocoa powder to coat.
Store in an airtight container in the fridge.
