Right as I enter Route 2, Leon gives us a capture tutorial, which is only forced if you have not caught any Pokémon before then, and then set off through Route 2 to visit Professor Magnolia at her house, but I come across some Trainers to battle along the way.

I am glad that the capture tutorial is optional, because if you didn't catch any Pokémon before then, you are forced to watch Leon catch a Pokémon, and he doesn't even use his Charizard when doing so.
Route 2 has Trainers there, and I really like the Trainer Battle theme in this game, I do like the soundtrack for Sword & Shield, but I won't go too far with it, as I haven't beaten the game at the time, not even in my personal playthrough.
Now onto encounters, and first up is the pre-evolution of Drednaw, it is Chewtle. Chewtle is a Water-type Pokémon that has Attack as its main stat, the downside is that Chewtle is stuck with Water Gun until it evolves, I recommend getting one with Strong Jaw, which will help with its Bite. Chewtle is a decent Pokémon to consider if you didn't pick Sobble.
Next up is Yamper, this little Electric-type dog has a rough start, Nuzzle is its only Electric-type move until Level 20 when it learns Spark, so it faces the same problems as Electrike and Shinx in previous games. While Yamper might seem underwhelming, it does become a speedy mixed attacker once evolved, and I will not spoil what it evolves into. This does test your patience, but Yamper will become a respectable team member once it learns Spark.
Then we get a 2% encounter with Zigzagoon, and it's not the Zigzagoon you know from Hoenn, it is Galarian Zigzagoon, and like Alolan Rattata, Galarian Zigzagoon is a Dark/Normal-type, and you do get Galarian Zigzagoon later on where they are more common, so I would wait till then. The nice thing is that in the Linoone stage, it gains another evolution, but only Galarian Linoone can evolve. Once it is fully evolved into Obstagoon, it has really good Defense and respectable Attack, so it will make a good team member if you are in need of a Dark-type to add to your team.
Then we have the random grass encounters, and you can either get Seedot or Lotad depending on your version, Seedot is exclusive to Sword, and it got even better, because in previous games, Seedot had Bide, but now it will have Absorb and Tackle, meaning Seedot is capable of fighting. It evolves into Nuzleaf at Level 14, and eventually into Shiftry with a Leaf Stone, the good thing about Shiftry is that you don't have to worry about when to evolve Nuzleaf, because all of Nuzleaf's level up moves can be relearned by Shiftry through the Move Relearner, so you can have early Extrasensory, Sucker Punch or Leaf Blade as soon as you get Shiftry, so it is not a bad team member.
Lotad in Shield is a Water/Grass-type with good Special Defense, it evolves into Lombre at Level 14, and with a Water Stone, it will evolve into Ludicolo. As a Lotad, it does get some interesting moves like Water Gun and Mega Drain, and like with Shiftry, you can reteach moves like Giga Drain, Energy Ball, and even Hydro Pump as soon as you get Ludicolo, so I recommend it, as it does have respectable Special Attack as well.
Then we have Purrloin, which is not even that good, as Pursuit was removed from the game, so Purrloin has to rely on Payback as its Dark-type move, which you get the TM for at the back of Professor Magnolia's house, so don't forget to check it after talking to her. While Purrloin's evolved form Liepard has high Speed, it is unfortunately not that great, so don't use it, you're better off using Galarian Zigzagoon instead.
There are some encounters you can get from fishing, and the most notable one is everyone's favourite fish, Magikarp. It is known as the most useless Pokémon, but if you are patient enough, it will become a super strong Gyarados, and it can learn some great moves like Waterfall, Ice Fang and Crunch, so Magikarp is a test of patience, and once it is evolved, your efforts are rewarded, because Gyarados is one of the most powerful Water-types available in the game.
I also forgot that there were some more encounters there, Chewtle can be obtained through fishing, and there was one other, which I will not spoil, but that Pokémon was technically shown pre-release alongside a Pokémon called Cramorant, but the fish thing wasn't named.
After visiting Magnolia, Hop challenges me to another battle, and he has a new team member, Rookidee. He will also have Wooloo and his starter, so this shouldn't be that hard of a fight, and then we have to head back to the station at Wedgehurst.
