I have two more League Club Coaches left, or Blueberry Academy students that is, and the next one is Carmine, while not part of the Blueberry Academy League like the others, but she does appear as one of the random two that appear in the Club Room, while most sites would say three random Trainers, Drayton is always in the Club Room. In order for Carmine to appear, you need to have completed the epilogue, same with her brother Kieran, and for interactions, Carmine can interact with the friends from Paldea.
Here is Carmine's team, and unlike the other Blueberry Academy students, her team isn't really as good as the others, but they do have some kind of strategy they can use, and even make use of their Abilities to help out in battle.
Mightyena: Super Fang, Howl, Yawn, Sucker Punch
Toucannon: Beak Blast, Throat Chop, Flame Charge, Dual Wingbeat
Morpeko: Aura Wheel, Lash Out, Thunder Wave, Seed Bomb (Focus Sash)
Ninetales: Flamethrower, Extrasensory, Will-O-Wisp, Disable
Scrafty: Brick Break, Crunch, Ice Punch, Bulk Up
Sinistcha: Matcha Gotcha, Hex, Stun Spore, Scald (Occa Berry)

Only two of Carmine's team have held items, and her team combines both her Kitakami team and her Blueberry Academy team, Mightyena, Morpeko, Ninetales, and Sinistcha are from her Kitakami team, while Toucannon and Scrafty are from her Blueberry Academy team. She doesn't use Leavanny for this team, which was a Pokémon she had back at Kitakami, and to go over her team, Mightyena has Intimidate and Toucannon has Sheer Force. Mightyena does have Howl to boost the Attack of its side of the field, and it has Sucker Punch to finish off weakened opponents, while Toucannon has Beak Blast to deal massive damage, and it can inflict burn to your Pokémon if you use a contact move on it.
Next is Morpeko, it can use Aura Wheel to boost its Speed, and depending on its form, it is an Electric-type or a Dark-type, and it has Seed Bomb to handle Ground-type Pokémon, and it has a Focus Sash equipped. Ninetales has its normal level up moves, they couldn't even give it Drought or go with better moves like Heat Wave or Solar Beam, or even give it Nasty Plot, but at least Scrafty has some good attacks and it has Intimidate, its Ice Punch is there to counter Flying-type Pokémon. Carmine's last Pokémon is Sinistcha, which will Terastallize to a Grass Tera Type, powering up its Matcha Gotcha, it can inflict status with moves like Stun Spore for paralysis, and Scald to inflict burn, and as it knows Hex, the move's power is doubled if used on a Pokémon inflicted with a status condition.
After the battle, Carmine gives you the Joke Glasses (Sinistcha) as a gift, and on your third interaction, she will trade you a Poltchageist for any of your Pokémon. It comes with a Partner Ribbon, giving it the title "Carmine's Poltchageist", it does come with the move Scald and has a Water Tera Type, and it is the Counterfeit Form, not the rarer Artisan Form, which means to evolve it into Sinistcha, it requires the Unremarkable Teacup, the Water Tera Type is really good on Poltchageist not only for a good defensive Tera Type, but also to power up Scald.
