Random Dark Souls Tutorial: Techniques and mechanics.

Parry: Use the left trigger / L2 when an attack would, normally, deal damage. (If you want a good, long parry window, the target shield, buckler and parry dagger offer a 33% longer window) (if an enemy readies to parry, shoot with magic or arrows, or give them a kick, the cheaters!)
Reposte: Right after a parry, the enemy is stunned. Tap RB/R1 quickly, and deal a massive hit! Does about 25% more damage than a backstab.
Backstab: Stand behind the enemy. Press no buttons. Tap RB/R1. If done correct, you will deal massive damage and disable the enemy for a while, should he survive. Does 400% damage of a regular RB/R1 attack!
Stagger: Occurs when stamina is drained, attack is deflected, hits a wall or has been parried, or the character is kicked. The next damage does 40% MORE DAMAGE!
So block and deflect. It'll save you health and deal more damage to the enemy. Sweet deal, right?
Counter: Just when the enemy is about to hit you, land your attack. Does 20% more damage (only for thrusting and piercing weapons). Beware, as the enemy might not be staggered and land his attack too!
Headshots: Most humans take headshots seriously. They stagger and take extra damage (about 20%?). A great way for an archer to be a chain-stunning jerk!
Overkill: Deal a sexy 120% max HP damage to an enemy and get 20% more souls. You'll know when you get it when the animation is longer and the sound sharper. Sweet. (doesn't matter how much HP the enemy has, just deal it in ONE hit)
Poise: Poise is nice. The more you have, the harder it is for enemies to stagger you! Don't want that Ultra Greatsword attack interrupted? Get some poise!
Flask: Use that Estus/Heal spell. Being at full health is critical when exploring strange new areas, where ambushed might be set!
Two-Handed: Press triangle/Y and wield your weapon with two hands! It gives 50% Strength bonus, on both your damage scaling AND requirements. Have 18 strength and want to use a 24 strength sword? Double hand that baby!
Humanity: Have about 10 for the best curse resist, item discovery and resistances. You don't have to be human, just have the counter at 10! Be human when you want to summon phantoms, invade others or get invaded!
Stamina: Perserve it! Wait until your enemy telegraphs his move and block! Stamina recovers more slowly while your shield is up. So only block when you must, and only attack when you feel safe. Else, you might have an untimely broken guard and a sword to the scalp!
Block stop and roll!: Not all attacks can be blocked. So don't be shy to roll away, retreat, heal up and get some distance from that impaling spear of doom. Or use trees to stop magic spells.
Don't be over confident: Don't jump into groups. Numbers are stronger than you think.
