Notes:
For the Pelican, set up camp and advance time to early morning. If you check the coastline north of Braithwaite Manor you should have no trouble finding one, just shot it before it takes flight, or it may end up in the water and become un-pluckable!
The rabbit and the turkey spawn all over the place, not just where shown, but the edges of woodlands are always a good bet.
The islands in flat iron lake are your only realistic option to get a crab for crustacean meat, you will also need to break the crab down in your inventory after you have picked it up.
For the fish, it should not be hard to find a fish that yields flaky meat as they are reasonably common. Use a lure to avoid getting smaller fish that yield gritty meat. However, for succulent meat, you'll need either a trout of a salmon. Check the map for where I catch the trout, further south along the lake you won't find them. Like the crab, you need to break the fish down to get the meat.
There will always be a herd of goats where shown by Larned Sod, and you shouldn't get a wanted level for killing one, unlike other areas.
Beef, Venison and Pork can all be bought from the butchers which will save time.
Alligators are numerous all over the Bayou and an easy way to get some Big Game Meat.
There are other types of meat available from other animals which is lower quality, but you don't need that for this challenge.
You then need to season each of these meats with one of Mint, Oregano, or Thyme, it doesn't matter which. If you have been following my guide, you should have picked enough of this when you completed Herbalist Challenge 9 (the link to the videos is below if you missed this)
