Following options may differ over time, depending on the xbox model, retroarch version, and developments.
Video Driver: OpenGL due D3D11 bug(make sure allow cores to switch the video driver)
Toggle between V-Sync and Hard GPU Sync OFF and ON.
Start in Fullscreen Mode on.
Toggle on and off Threaded Video to see if it helps.
