Decided to go back and give Sakuya-B another try. While I couldn't really avoid the Throwing Knife spam, I ended up with a very specific deck built around discards.

The two Blue Mana characters (Sakuya-B and Cirno-A) both have discard-focused cards. What I didn't realize is that Sakuya likes discarding Throwing Knives specifically, because Throwing Knives still activate when discarded. C-Ricochet is really great if you have a way to discard every turn (like with Maid Trick), though the centerpiece of this strategy was the Lunatic Gun relic. Lunatic Gun deals 8 damage for every discarded card, and if you have a lot of "draw and discard cards" you can rack up a lot of damage fast.

Discards alone aren't enough to win a run, so I also incorporated some other cards. I relied on some of the "weaker" Time Pulse cards to add some DPS. Time Pulse deals to damage to all enemies on screen. The damage depends on the level it's at (so 4 Time Pulse = 4 damage) but it's level is reduced by the number of enemies it damages (if you have 4 Time Pulse, and there are 4 enemies, you will be left with 0 Time Pulse. But if you have 4 Time Pulse and only 1 enemies, you will be left 3 Time Pulse).

I also made use of Sakuya-B's other specialty; giving herself extra turns. Her Spellcard is the easiest way of doing that (without using up her mana) though she has multiple rare cards that can do the same thing. These usually have restrictions (like "Sakuya gets an extra turn after killing an enemy" or "Sakuya gets an extra turn, but every card is double price" or "Sakuya gets an extra turn but she cannot draw new cards in that turn" etc.

Anyway, now that I know how to play Sakuya, I find her to be pretty fun. I'm definitely looking forward to future characters (like Koishi).
