Ideally you can try saving the trebuchets from getting destroyed by the knights, but this is usually near impossible to do as I recall playing this mission back when this game was released. Instead, you want to climb a wall section that has expended rolling logs already (use peasants to trigger them) then use ladder men to set the ladders and pour your troops in to clear the archers. Make your way to the castle and kill the lord (Lady Serene) to win.

Be careful, there are traps in front of the gate, this is why you charge in with the expendable armed peasants first.
