After restoring the Lighthouse in Delfino Plaza, this gives Mario access to Gelato Beach, which is said to be where the egg of the legendary Sand Bird is, and this beach has a bunch of duck-like creatures called Cataquacks, and there are some Dune Buds which create a sand sculpture when sprayed. The Sand Bird will be one challenging objective in Gelato Beach.

To access Gelato Beach, you will need at least 5 Shine Sprites and defeat the Proto Piranha to restore the Lighthouse, and enter the Rainbow M in order to enter Gelato Beach. At the time I recorded this video, it was when the update for Super Mario 3D All-Stars went live, and it allowed you to use the GameCube controller for Super Mario Sunshine, I wasn't sure if it was this video or the next part where I use the GameCube controller.
This area is where the sun shines the brightest, so the darkness covering Isle Delfino only affects Delfino Plaza for some reason. Gelato Beach is the first area where we encounter Nokis, and some of them stand in front of Dune Buds, which if you spray them with FLUDD, they grow up and a sand sculpture will form and throw Mario into the air, and this is one of few ways to defeat these creatures called Cataquacks.
This the game Cataquacks first appeared in, and they did appear in a few other games, like Super Mario Galaxy, and they also appeared on the track Peach Beach in Mario Kart: Double Dash!!, which had Green and Purple Cataquacks, but this game only has Blue and Red Cataquacks, right now there are more Blue Cataquacks, and they don't damage Mario, while the Red Cataquacks can.
What you need to do for the first episode, Dune Bud Sand Castle Secret, is to spray a Dune Bud located in front of the peninsula, and a sand castle will form, enter the opening, and it will take you to a secret course, but at the cost of losing FLUDD.
The secret course has sand blocks, which will disappear if Mario steps on them, and they can respawn after a short time, and you have to get through the sand blocks to the end of the course, and you have to climb up a sand castle made of sand blocks to get the Shine Sprite.
The second episode is Mirror Madness! Tilt, Slam, Bam!, there is a large Wiggler sleeping on top of a tall tower where the egg of the legendary Sand Bird is in. These enemies on the mirrors are not Cataquacks, they are called Plungelos, as in the plunger-like feet they have, and each mirror has a number of them on them, one, two, and three of them, one Plungelo is easier to defeat, but two and three are harder, you have to spray them with FLUDD, and Ground Pound to send them flying. When all the Plungelos are defeated, it will restore the mirrors and Wiggler will fall off, and you get your Shine Sprite.
Next is Wiggler Ahoy! Full Steam Ahead!, and after restoring the mirrors, Wiggler is mad, and it is charging all around the beach, so to defeat it, you have to spray the Dune Buds and the structure will flip Wiggler over, and an arrow will appear and you have to Ground Pound the segment before Wiggler could get up. You have to repeat this two more times, but it will get harder, as Wiggler is faster after each hit, and after defeating it, you can get your Shine Sprite.
Next is one of the most infamous episodes in all of Super Mario Sunshine, this one is The Sand Bird is Born, and what you have to do is get to the top of Gelato Beach, spray a Dune Bud to create stairs, and go to the plaza and slide down, following a trail of coins and enter the tower, and you will be on the back of the Sand Bird.
You have to collect all 8 Red Coins, 7 of them are on the Sand Bird, and there are some Blue Coins on the clouds if you are interested in them, and you can use them as platforms when the Sand Bird tilts over, the final Red Coin is on the tall tower, and that is where the Shine Sprite appears, the Sand Bird will descend and reset its pattern if you didn't collect all of the Red Coins.
I decided to do Episode 5, and this one introduces Il Piantissimo, it is Il Piantissimo's Sand Sprint, and you will see a weird looking Pianta waiting for Mario, and you have to race him to the flag. Il Piantissimo is not really a Pianta, there is a picture of Il Piantissimo without his Pianta mask, and I have seen rumours that he is really the running man from The Legend of Zelda: Ocarina of Time. When you have beaten Il Piantissimo to the flag, you can earn your Shine Sprite.
