With access to Yoshi, Mario revisits some of the past areas to complete them 100%, so that's collecting all 100 coins and all 30 Blue Coins for each course. He starts off with Bianco Hills, and the best episode to do the 100 coin Shine is Episode 8, and I would recommend waiting till you have Yoshi to do it, he's not required, but it makes it a little easier.

This video is about collecting everything in Bianco Hills, so that is the 100 coin Shine, and all 30 Blue Coins. I recommend Episode 8 for the 100 coins, but you don't really need Yoshi for it, but it does make it a little easier.
What I recommend doing is starting with the main village in Bianco Hills and spraying the Pokey Heads into walls to get 3 coins, and if you spray the ring of flowers, you can get a bunch of coins from it. On the other side of the village, there are some Seedy Pods on top of the trees, and you have to spray them from a distance to defeat them, because if you go near them, they scatter seeds around them.
There is the ropes where the Red Coins would be in Episode 8, and that has a good amount of coins there, or an alternative is to have Yoshi eat the bees, and one hive does give you a Blue Coin when you have eaten all the bees. Once you have collected 100 coins, the Shine Sprite will be on top of a windmill. I personally think this game's 100 coin Shine Sprites are way more complicated than getting 100 coins in Super Mario 64, while Super Mario 64 did have some tricky 100 coin Stars, I find that with Sunshine, you have to look in every corner, and you have to play certain episodes to collect them, so in this case, I recommend Episode 8 for Bianco Hills 100 coin Shine Sprite.
It will take a lot of space of the description to go over every Blue Coin location in Bianco Hills, but all of them do appear in Episode 8, so Bianco Hills is the only course where you can collect all 30 coins in one visit. There is one Pianta that gives you a Blue Coin when you clean him up, and he first appears in Episode 3 and will appear in different locations based on what episode you are playing.
The easy ones are the Red M paintings on walls, and there is some graffiti that spawns a Blue Coin in another location, so you have to get there quickly.
There are two Blue Coins in the water, but I don't recommend going with Episode 6 for them, as the lake is poisonous and can damage Mario if he enters the water. Super Mario Wiki does have a detailed list on where to find all 30 Blue Coins, and I would say Bianco Hills is an easier course to find all the Blue Coins if you follow the list, because I know in later courses, they have very difficult Blue Coin locations, and some can be found by spraying a Blue Bird in some courses, Bianco Hills has one. Two Blue Coins require Yoshi, there is the Blue Butterfly in the village, and the beehive on the other side.
Yoshi only appears in Episode 8 of Bianco Hills, the Yoshi Egg is at the starting point, but the fruit that he needs is on the other side of the village, where the lake is, and you have to carry said fruit all the way to the starting point, and what makes this tricky is getting Yoshi to jump over the river, because he will dissolve when he enters water, making all this effort wasted.
After getting access to Yoshi, and starting from 25 Shine Sprites, Shadow Mario will be carrying the Turbo Nozzle, so you have to spray him until he falls over, and you can unlock the Turbo Nozzle in Delfino Plaza, the Turbo Nozzle allows Mario to move very fast and travel on water, but turning is very difficult. It can even be used to break through some doors, there is one building under the west bell tower which requires the Turbo Nozzle, and there is a Shine Sprite in there.
When you have 30 Shine Sprites, Shadow Mario will be carrying the Rocket Nozzle, so defeat him to unlock it, and with that, you can blast off into the air with pressurized water, and there are some examples, there is the lighthouse in Delfino Plaza, and after using the Rocket Nozzle and doing a Ground Pound, you can break the stone slab on top of the lighthouse, and this is how you can get one of the Shine Sprites in Delfino Plaza, another place is the Shine Gate, and there is a Warp Pipe on top of it which leads to another course.
Another thing you can get when you have 30 Shine Sprites, if you talk to the Pianta on the beach in Delfino Plaza, he will give Mario some shades, while it does look cool, it darkens the screen a bit, but if you want to take them off, talk to the Pianta again.
