At this point in the game I was kinda of stuck. I couldn't beat Rem smoothly, there were a handful of extra bosses to take down, and I was getting distracted by a bunch of extra stuff/recipes/etc. So I decided I would grind until I came up with a plan. So I grinded (ground?) pretty much everything outside of level 30 Craymels. And then I decided between Maxwell, Siren, and Shadow, the latter seemed the most useful since Dark Force would be useful against Rem. So after getting expelled from the dungeon's enemies earlier, I came back for round 2.

Shadow works mostly on counters. Jumping near him makes him do an instant aerial counter, and trying to attack him can sometimes lead to catching a blade to the face. His aerial counter also rarely extends into the hi-ougi(?) Punishment, which is quite painful, but again, pretty rare. In order to keep him and his dolls (that never die) away from the party, Farah proved invaluable and much more vital than Reid. Eagle Rage and Chi are the safest ways to attack the guy since they both do a solid job at overcoming Evasion issues.

Otherwise it's a basic setup, blasting him and the dolls away from the casters whenever possible and letting Max get Aqua Spiral/Rage Laser off as much as possible. Fortunately without too much trouble he drops.
