There are a couple of tracks that get re-used between the Sonic karting games (Sonic & Sega All-Stars Racing, Sonic & All-Stars Racing Transformed and Team Sonic Racing) and, as far as I can tell, the only one that makes an appearance in all 3 is Roulette Road - so let's do a three way split-screen comparison between all 3 games and see how this particular stage has evolved across 3 games over 2 different console generations.

The first two games were 7th generation console titles. Sonic & Sega All-Stars Racing is running on my Xbox 360 and Sonic & All-Stars Racing Transformed on my PS3. Team Sonic Racing was an 8th generation console game and is running on my PS4. With the added blast processing power of an 8th gen machine, Team Sonic is running at 60fps and the first two are both 30fps. I'm going to do a separate upload comparing the PC version of Roulette Road on the PC version of Transformed to Team Sonic, as the PC game was also 60fps and could run in higher resolution.
