"Magic Fried Chicken"

■ Ingredients (Serves 2)
・1 chicken thigh (300g)
・1 tablespoon cake flour
・1 1/2 tablespoons potato starch
・Salad oil, to taste
☆Meat Seasoning
・1 tablespoon soy sauce
・Salt and pepper, to taste
・1/2 teaspoon grated ginger

■ Procedure
(1) Pat the chicken dry with kitchen paper and cut into bite-sized pieces. (Cutting into uniform bite-sized pieces will affect the cooking time.)
(2) Place the chicken and the ingredients marked with * in a bowl and mix until the water has evaporated. (If there is too much water, the chicken may splash when you add it to the oil, so mix thoroughly.
Lightly wipe off any excess water if necessary.)
(3) Add about 1cm of salad oil to a frying pan, add the cake flour and potato starch, and mix until the powder disappears. (You can use either the plain flour or potato starch. Use a total of 2 1/2 tablespoons.)
(4) Heat over medium heat while stirring. When whitish bubbles appear, add the chicken from step 2. Fry, turning the chicken over, for about 8 minutes until the batter is evenly coated and the meat is cooked through. (Since the flour is dissolved directly in the oil, the oil is prone to deterioration, so please avoid reusing the same oil.
