Wrapping enoki mushrooms in rice paper makes them look almost like scallops! ♪ This time, we're using a butter and soy sauce flavor, but we also recommend simply seasoning them with salt and pepper for a crispier texture.

■Ingredients (Serves 2)
・2 sheets of rice paper
・1 bag (200g) enoki mushrooms
・Potato starch, as needed
・1 tablespoon salad oil
☆Seasonings
・1/2 tablespoon soy sauce
・10g salted butter

■Procedure
(1) Cut off the base of the enoki mushroom. Make a slit in half near the base and split it open by hand.
(2) Quickly dip the rice paper in water, place it on a cutting board lined with damp kitchen paper, and place half of the enoki mushrooms facing forward, rolling tightly. Repeat this process to make two pieces in total. (・Placing damp kitchen paper on the cutting board will make it easier to roll without sticking.
・When rolling, roll tightly so there are no gaps.)
(3) Cut into 2cm wide pieces and sprinkle potato starch on the cut edges.
(4) Heat salad oil in a frying pan over medium heat and place the rice paper from step 3 cut-side down. Cook for about 2 minutes until golden brown. Flip and cook for 2-3 minutes until cooked through and golden brown.
