"Salmon Poke Rice Bowl Style"
■Ingredients (Serves 2)
・2 bowls of rice (400g)
・300g salmon (sashimi)
・1 avocado
・1/4 onion
・1 teaspoon sesame oil
・20g chopped green onions
・1/2 teaspoon white sesame seeds
☆Seasonings
・2 tablespoons soy sauce
・1 teaspoon sugar
・1 tablespoon mirin
■Procedure
(1) Remove excess water from the salmon and cut into 1cm cubes. Slice the onion thinly, cutting across the fibers, then rinse in water and drain.
(2) Combine the ingredients listed above in a bowl and mix. Cover loosely with plastic wrap and microwave at 600W for 30 seconds, then let cool.
(3) Add sesame oil to 2, and add a small amount of chopped green onion and white sesame seeds, leaving the remaining amount for garnish, and mix.
(4) Add the salmon, toss, cover tightly with plastic wrap, and let sit for about 10 minutes to allow the flavors to infuse.
(5) Cut the avocado in half lengthwise, remove the seed, peel, and cut into 1cm cubes. Add to 4 and mix quickly. (Be careful not to break up the avocado.)
(6) Place the rice in a bowl, layer the onion on top, and top with 5. Sprinkle with the chopped green onion and white sesame seeds for garnish.
