Directly after the Base Defense, Bradford and his friends found Rosalina Fetta, a XCOM cook, dead in the kitchen. Aliens have managed to get to her and to exterminate the cook.
One of those who were her students in cooking for XCOM, Chloe, managed to survive the onslaught. She was found deeply scared in a locket, refusing to go outside. After a hour or two, she finally came out of this locket.
When Bradford checked for anyone who could replace Rosalina, nobody answered. Because they were toast as well. So, Chloe became a new XCOM cook because there were no competition for her. Her food isn't as good as Rosalina's, but decent enough to be better than bland ration the usual armies get.
She likes good smells. She hates aliens.

Yes, it is known that Vahlen is the doctor. But she is the chief scientist on the base.
Who controls the infirmary then? It's the job for Josh McBuck - an accomplished New Zealand surgeon. XCOM life is full of danger and injuries - and so the organisation needs good medics. Josh is old-school type - do fast, do efficiently, but with a lot of pain.
His methods make the soldiers fear the trip to infirmary but the doc himself is a pleasant guy. His medicine is painful but working wonders. Certainly a good man to keep on the base.
He likes chatting with patients. He hates crying.
