How is the Christmas cake made?
Nothing — not even Santa Claus or Christmas tree — defines Christmas as much as the as the delicious rum & raisin cake. Christmas celebrations officially begin on the first Sunday of December known as Advent, and that's when the cakes are baked en masse. But the preparations start way before. According to Md Haroun, a Dehdradun baker specializing in Christmas cakes, the raisins are soaked in rum or sherry at least a month-and-a-half before the cake is to be baked. This process is called 'feeding'. After Advent, they are mixed with dry fruits, orange peel, cherries, processed ginger, nutmeg etc in a big pan.
